Peru is the world's leading producer of organic coffee. This coffee is produced by the APROCOYCE Cooperative in the Amazonas region consisting of over 280 small farmers. This region is renowned for growing high quality coffee.
Coffee is shade grown and sorted using floatation tanks before undergoing fermentation for approximately 16 hours. Finally, the beans are dried on sun beds before final sorting and grading.

Ideally you should grind as you go. It’s important that your grind is matched to the coffee making process with plunger being very coarse and espresso being very fine.

To preserve all those delicate flavours of freshly roasted beans, store them in either an opaque collapsible air tight container or vacuum sealed bag at room temperature away from direct sunlight.
